Mall Style Soft Pretzels

A nostalgic recipe that will bring you back to eating pretzels in the mall.

Ingredients

  • 151 g baking soda (2/3 cups)
  • 240 g of warm water (1 cup)
  • 25 g honey or granulated sugar (2 tablespoons)
  • 7 g active dry yeast (1 packet)
  • 6 g of salt (1 teaspoon)
  • 8 tablespoons unsalted butter (divided)
  • 375 g all-purpose flour (3 cups)
  • Vegetable oil, to grease the bowl
  • Pretzel salt or course salt

Instructions

  1. Preheat oven to 250°F.
  2. Line of baking sheep with aluminum foil. Evenly sprint the baking soda over the prepared baking sheet. Bake for one hour.
  3. Melt 2 tablespoons of the butter.
  4. Add water into a large bowl whisk in the honey until dissolved. Sprinkle the yeast over the water and let’s sit until frothy, about 5 minutes.
  5. Add the salt and melted butter. Then add the flour, stirring in a bit at a time. Need the dough until smooth and elastic. Place in a greased bowl. Cover with plastic wrap or kitchen towel. Let proof until double in size about 45 minutes to an hour.
  6. Once baked baking soda is done set aside. (Do not breathe in and use gloves as it can be irritating.)
  7. Preheat the oven to 450°F. Line sheet pans with parchment paper and set aside.
  8. After proofing drop the dough onto the counter. Divide the note into six even strips.
  9. Roll into long thin ropes about 36 inches each. Shaped them into the classic pretzel shape.
  10. Pour 3 cups of hot, tap water into a large bowl either stainless steel plastic or glass. What’s the baked baking soda into the hot water until dissolved. Dip each pretzel, one at a time, into the baking solution for about 30 seconds being completely submerged. Place on the prepared baking sheets. Sprinkle the pretzels with pretzel salt. Bake for eight minutes, turning the tray halfway through or until brown. While baking melt the rest of the butter.
  11. Once baked, removed from oven, and brush the freshly baked pretzels with melted butter. Serve warm. Enjoy!

Notes

  • To make cinnamon sugar pretzels, don't add pretzel salt before baking. Combine sugar and ground cinnamon and a large pan or tray. Approximately 2 tablespoons of cinnamon per cup of granulated sugar is ideal. Once the pretzels are baked, brushed them with butter. While they're still warm, placed them one at a time and the tray of cinnamon sugar, and shake back-and-forth to coat. Enjoy!
