Ingredients
- 89g old-fashioned oats (1 cup)
- 240g boiling water (1 cup)
- 7g active dry yeast (1 packet)
- 73g warm water (110°F to 115°F) (1/3 cups)
- 160g maple syrup (1/2 cups)
- 9g canola oil (2 tsp)
- 9g salt (1.5 tsp)
- 480g all-purpose flour (4 cups)
Topping
- One egg, white, lightly beaten
- 4g old-fashioned oats (2 tbsp)
Instructions
- Place oats in a blender or food processor, cover and process of it for 67 seconds or until coarsely, chopped. Transfer to a small bowl and add boiling water. Let stand until mixture cools to 110° to 150°F.
- In a large bowl, dissolved yeast in 1/3 cup warm water. Add syrup, oil, salt, oat mixture and half the flour. Beat until smooth. Stir in remaining flour.
- Turn the dough onto a lightly flowered surface. Need until smooth and elastic, about 6 to 8 minutes.
- Place in a greased bowl, turning once grease the top. Cover and let rise in a warm place until doubled about one hour.
- Punch down dough. Turn the dough onto lightly flowered surface. Shape into a flatten 9 inch round loaf. Place and grease 9 inch round baking dish cover and let rise until doubled about 45 minutes.
- Preheat oven to 350°F.
- Brush with egg whites and sprinkle with oats. Bake for 30 to 35 minutes or until golden brown.
- Remove from oven and take out a pan to place on wire rack to cool. Enjoy!
Notes
- if the dough is too wet, add a little more flour.
