Potato Rolls

These potato rolls are super soft, fluffy, and delicious!

Ingredients

  • 120 g water (1/2 cup)
  • 187 g of milk (3/4 cup)
  • 44 g unsalted butter (3 tablespoons)
  • 22 g potato flakes (1/3 cup)
  • 440 g all-purpose flour (3 1/2 cups)
  • 7 g active yeast (1 packet)
  • 12 g sugar (1 tablespoon)
  • 1 large egg
  • Flaky salt

Instructions

  1. combine buttermilk and butter in a microwave say measuring cup. Heat it between 120° to 130°F about one minute in the microwave. It’s best if you can use an instant read thermometer.
  2. Stir in potato flakes.
  3. Pour the ingredients into a stand mixer, fitted with a paddle attachment.
  4. Combine 1/3 of the flour with yeast, sugar and salt. Add to the mixer while on medium speed after one minute add egg and 1/3 flour. Mix for another minute. Add the last third of flour onto your dough comes together to a soft dough.
  5. Turn out the dough onto a flower surface and dust it with flour. Need until the dough comes together a ball and it bounces back when press with two fingers. This will take 4 to 6 minutes.
  6. Let the dough rest for 10 minutes while covered with a kitchen towel.
  7. Divide dough into 12 equal pieces. Roll each into a ball and place into a 9 x 13″ pan that’s been greased. Cover and let rise until double, about 30 minutes to an hour.
  8. Preheat the oven to 375°F.
  9. Bake for 20 to 28 minutes or until rolls are golden. Rotate the pan halfway through.
  10. Remove from oven and brush with melted butter and flaky salt. Enjoy!
